Ebi Mayo (エビマヨ)

If there were one food that would get me into trouble with my allergies, this would be it (other than honey roasted peanuts).

These fried shrimp are a very popular item in izakaya, and I found that it enhanced the taste of a red wine we had from Rockpile vineyards (at least I think that was it).

The sauce is very similar to Thousand Island dressing, and it all comes together very nicely.

The best part? It only takes 15 or so minutes. I used this recipe.

Ingredients

  • 12 prawns, peeled and deveined
  • ¼ cup sake
  • 5 tbsp katakuriko or corn starch
  • cooking oil

Sauce

  • 3 tbsp Japanese mayonnaise
  • 1 tbsp milk (optional)
  • 2 tsp ketchup
  • 2 tsp honey or sugar

Method

  • Marinate shrimp in sake for 2-3 minutes.
  • Dredge shrimp in corn starch and fry in pan with about ¼” oil until cooked and golden brown, about 2 minutes per side.
  • Remove and transfer to paper towel. Pat to remove excess oil.
  • Mix sauce ingredients together, adjust to taste, coat shrimp with mixture, and serve.
